The best part about the day after Thanksgiving, besides the sleeping in and big sales, are the leftovers! Allow me to suggest an alternative to the turkey sandwich, or meat loafs. Here’s a quick and easy way to revamp your Thanksgiving leftovers and turn them into a delicious breakfast for you and your loved ones.
You can use a couple of different methods, depending on how many people you have to feed and what you have on hand. I use a cupcake tray here, but I’ve also used pie baking dishes and ramekins. It doesn’t matter what you bake this dish in, just make sure you spray the dish with a non-stick oil before you begin. If you run out of egg mix you can also crack a whole egg in each dish, as I did in some of mine below. You can serve these with a side of leftover cranberry or apple sauce and a slice of cornbread.
