Make Egg Casseroles With Your Thanksgiving Leftovers

Posted on

The best part about the day after Thanksgiving, besides the sleeping in and big sales, are the leftovers! Allow me to suggest an alternative to the turkey sandwich, or meat loafs. Here’s a quick and easy way to revamp your Thanksgiving leftovers and turn them into a delicious breakfast for you and your loved ones.

You can use a couple of different methods, depending on how many people you have to feed and what you have on hand. I use a cupcake tray here, but I’ve also used pie baking dishes and ramekins. It doesn’t matter what you bake this dish in, just make sure you spray the dish with a non-stick oil before you begin. If you run out of egg mix you can also crack a whole egg in each dish, as I did in some of mine below. You can serve these with a side of leftover cranberry or apple sauce and a slice of cornbread.

I hope you have a wonderful Thanksgiving and remember to be grateful for all you have. I’m thankful for my family, friends and all the wonderful food I get to enjoy. Not having to worry about where my next meal will come from is honestly one of the biggest blessings in my life. I know many people out there are not as lucky. Because every day people living right here in our local communities go hungry. To learn more about the importance of food security, and how you can help, please visit any of the following websites:
