Make Egg Casseroles With Your Thanksgiving Leftovers

The best part about the day after Thanksgiving, besides the sleeping in and big sales, are the leftovers! Allow me to suggest an alternative to the turkey sandwich, or meat loafs. Here’s a quick and easy way to revamp your Thanksgiving leftovers and turn them into a delicious breakfast for you and your loved ones.

You can use a couple of different methods, depending on how many people you have to feed and what you have on hand. I use a cupcake tray here, but I’ve also used pie baking dishes and ramekins. It doesn’t matter what you bake this dish in, just make sure you spray the dish with a non-stick oil before you begin. If you run out of egg mix you can also crack a whole egg in each dish, as I did in some of mine below. You can serve these with a side of leftover cranberry or apple sauce and a slice of cornbread.

Last week I had a special guest in my kitchen, my best friend Katie. She was visiting for the weekend and had a craving for the traditional chilaquiles my family makes, so obviously, as a good hostess I had to deliver. Not such a selfless act on my part, since I’m always looking for an excuse to eat chilaquiles. This is a very traditional breakfast or brunch dish in Mexico, normally served with a side of pinto beans and eggs. My mom made chilaquiles regularly since it was my brother’s preferred breakfast meal. Perhaps it’s the simplicity of making chilaquiles that makes this dish a staple, while at the same time bringing an explosion of taste to the palatte. Long ago, well not THAT long ago, I was that scrawny kid who couldn’t get up in time to eat breakfast before school. At that time, my dad who was in charge of breakfast, would make us smoothies. I think he made them to help get us out the door faster and I always appreciated his thoughtful concoctions of fresh fruit, yogurt and milk. My only quarrel was when he would put a raw egg in the smoothie, which still gives me a gag reflex just thinking about it… Still, the guy meant well, he made sure we got our vitamins, minerals, protein and carbs all in one smooth drink that we could take to school without complaint.
