MOVING ON UP!!!

My fellow spice-o-holics. I want to thank you from the bottom of my heart for coming to visit my food blog. As you can probably tell, I haven’t posted a new recipe in a while. That’s because I’ve been working on a lifestyle blog that will include all of the delicious content here, plus other fun and captivating life topics, such as relationships, passions, culture and shoes. And of course, the recipes will keep on coming!

Very soon, all the recipes here, including the fan favorite: Sopa de Fideo, will be moved to: NotTheCoolGirl.com, where you can join the rest of us who strive to live a more authentic and delicious life.

Breakfast in a Cup – Berry & Peanut Butter Smoothie

It’s been almost two years since my last recipe post. TWO years!!! I know. You have no idea how much has changed since I posted the recipe to those delicious Joy Flakes! 

So let me fill you in. In the past two years I’ve changed jobs, changed boyfriends (that sounds so dismissive but it’s way too complicated to explain over a recipe post), bought a home and lost a very important family member to stomach cancer. 

I think it’s fair to say that my life has been incredibly demanding and frustrating at times. In fact, things got so sad last winter that I even stopped cooking all together for a while. I had no desire to post or share recipes. All I could talk about was love, life and dating. There was no time for the joy of cooking, no pun intended. 

Slowly my desire to try new recipes and bringing back the classics has returned, thanks in part to my amazing boyfriend who loves cooking as much as I do and inspires me every day.

Berry & Peanut Butter Smoothie

  
This smoothie has changed my life! It takes less than five minutes to make every morning. It’s packed with 18 grams of protein, loaded with antioxidants, vitamin C and fiber.

Servings: 1

Ingredients

1 Cup orange juice (not from concentrate)

1/3 Cup of organic frozen berries

3 TBSP Raw Shelled Hemp Seeds, organic 

2 TBSP Powdered peanut butter. I use the PB2 brand, but there are others. Definitely best to use the powder because it has 85% les fat than regular peanut butter. 

1 TBSP milled flax seed, organic

Mix all ingredients together in a blender of choice and liquefy until the mixture is smooth. If seeds bother you, maybe try using a high power blender like the Vtamix or the Nutri Bullet. 

Pour and enjoy!

Variations:

Try adding plain yogurt or swap the orange juice with almond milk for a low sugar version, just make sure you add a little bit of honey to the mix.

Make Egg Casseroles With Your Thanksgiving Leftovers

The best part about the day after Thanksgiving, besides the sleeping in and big sales, are the leftovers! Allow me to suggest an alternative to the turkey sandwich, or meat loafs. Here’s a quick and easy way to revamp your Thanksgiving leftovers and turn them into a delicious breakfast for you and your loved ones.

You can use a couple of different methods, depending on how many people you have to feed and what you have on hand. I use a cupcake tray here, but I’ve also used pie baking dishes and ramekins. It doesn’t matter what you bake this dish in, just make sure you spray the dish with a non-stick oil before you begin. If you run out of egg mix you can also crack a whole egg in each dish, as I did in some of mine below. You can serve these with a side of leftover cranberry or apple sauce and a slice of cornbread.

Not having to worry about where my next meal will come from is honestly one of the biggest blessings in my life. I know many people out there are not as lucky. Chorizo con Papas {Potatoes with Chorizo}

Another Mexican Twist on Thanksgiving!

Brrr… It’s two days before Thanksgiving and we’re already dealing with snow storms in Ohio. Luckily we don’t have to go far to celebrate the holiday with our loved ones, but to those who do, travel safe and good luck!
