Breakfast in a Cup – Berry & Peanut Butter Smoothie

It’s been almost two years since my last recipe post. TWO years!!! I know. You have no idea how much has changed since I posted the recipe to those delicious Joy Flakes! 

So let me fill you in. In the past two years I’ve changed jobs, changed boyfriends (that sounds so dismissive but it’s way too complicated to explain over a recipe post), bought a home and lost a very important family member to stomach cancer. 

I think it’s fair to say that my life has been incredibly demanding and frustrating at times. In fact, things got so sad last winter that I even stopped cooking all together for a while. I had no desire to post or share recipes. All I could talk about was love, life and dating. There was no time for the joy of cooking, no pun intended. 

Slowly my desire to try new recipes and bringing back the classics has returned, thanks in part to my amazing boyfriend who loves cooking as much as I do and inspires me every day.

Berry & Peanut Butter Smoothie

  
This smoothie has changed my life! It takes less than five minutes to make every morning. It’s packed with 18 grams of protein, loaded with antioxidants, vitamin C and fiber.

Servings: 1

Ingredients

1 Cup orange juice (not from concentrate)

1/3 Cup of organic frozen berries

3 TBSP Raw Shelled Hemp Seeds, organic 

2 TBSP Powdered peanut butter. I use the PB2 brand, but there are others. Definitely best to use the powder because it has 85% les fat than regular peanut butter. 

1 TBSP milled flax seed, organic

Mix all ingredients together in a blender of choice and liquefy until the mixture is smooth. If seeds bother you, maybe try using a high power blender like the Vtamix or the Nutri Bullet. 

Pour and enjoy!

Variations:

Try adding plain yogurt or swap the orange juice with almond milk for a low sugar version, just make sure you add a little bit of honey to the mix.
