Fireworks Sliders

If you’re still undecided about what to cook today as you celebrate Independence Day with your loved ones, I suggest you give these sliders a try.

Sliced in half these sliders are the perfect size for a late afternoon or pre-fireworks snack. Or you can leave them whole and serve them with a side of grilled sweet potatoes for lunch. I named them “Fireworks Sliders” because they’re the life of any party! You won’t be disappointed with the smoky chipotle flavor, tangy pineapple and crunchy bacon. Follow my lead and trade out the mayo with my Chipotle Tzatziki {recipe}, for a lighter approach.

Whatever you decide to cook in your kitchen or grill this fourth of July, make it memorable, delicious and take lots of pictures!

My girlfriends and I took this photo last weekend in front of the U.S. Capitol and I think it goes perfectly with one of the most recognized phrases in the Declaration of Independence: Life, Liberty and the pursuit of Happiness.

FIREWORKS SLIDERS {Pineapple Bacon & Chipotle Sliders with Grilled Sweet Potatoes} 


1 LB ground beef

2 TBSP freshly chopped white onion

1 TBSP freshly chopped cilantro

1 TBSP chopped chipotle peppers {Canned works best for this recipe.}

1 TBSP Worcestershire Sauce

8 strips of raw bacon

8 quarter slices of fresh pineapple

1 Large sweet potato

Olive oil

8 Slices of Gouda cheese

8 Dinner rolls, sliced open for the “buns”.


1. SLICE the pineapple. If you’re slicing a whole pineapple, the easiest way to do it is to cut off the ends of the pineapple, then carefully cut off the skin. Once that’s done, stand the pineapple on one end and slice it in half. Take one of the halves and slice that in half lengthwise. Now that you have a quarter of the pineapple, slice that into 1 – 2 inch pieces.

2. CUT the sweet potato in half (lengthwise), then slice both halves into 1/4 inch wedges.

3. MIX the beef, onions, cilantro, chopped chipotle and Worcestershire sauce in a medium bowl. Sprinkle with fresh ground pepper and salt if needed.

4. MAKE meatballs about the size of a golf ball, then flatten until each patty is about 1/2 an inch thick. Place the patties on a tray and cover with a lid or plastic wrap.


Beef Patties


1. LINE a third of the grill with foil.

2. HEAT to 350 degrees Fahrenheit or medium heat.

3. LAY the sweet potato wedges on part of the foil and drizzle lightly with olive oil.

4. LAY the bacon on the other half of the foil immediately after the sweet potatoes and close the cover. Wait 5 Minutes.

5. FLIP the bacon and potatoes, 5 MINUTES IN. Sprinkle the sweet potatoes with salt and fresh ground pepper. {I used pink peppercorns.}

6. PUT the patties on the side without foil, then the pineapple. You can also put the dinner rolls on the top rack if you want them warm and toasty. Wait another 5 minutes, or less depending on how you like your meat cooked then…

7. FLIP the patties, potatoes, pineapples and bacon. {This is my recommendation, but if you like your meat rare or medium rare you’ll want to flip sooner.} Don’t let the bacon get crispy so you can still fold it over the patty.

8. REMOVE the sweet potatoes from the grill, once they’re cooked all the way and set aside.

Grilled Sweet Potatoes

9. {Once the meat is cooked to your liking} FOLD one strip of cooked bacon on top of a patty, then place a slice of cheese on top of the bacon, repeat on all patties and close the lid to the grill. Lower the heat to medium-low. It won’t take very long for the cheese to melt.

{This is where you can use my recipe for Chipotle Tzatziki instead of mayo for a healthier topping.}

1. PUT a dollop of Chipotle Tzatziki or mayo on the bottom bun.

2. LAY the cooked patty on the bun.

Build you sliders.

3. TOP with a slice of grilled pineapple.

4. ADD ketchup and another dollop of Chipotle Tzatziki, or mayo. {Hot sauce works too ;-)}

5. SERVE immediately with a side of grilled sweet potato wedges.
